Often times I feel like I'm a fake. Sure the 'boys' think I'm large and in charge, but truthfully, anything bigger than a breadbox would qualify as 'large and in charge' under the 'boys' existing definitition.

The neighborhood tomcat could be identified as LAIC under their definition. The dang, huge Skippy the Squirrel could hold the LAIC name badge according to the 'boys' working definition. It's really a bit of a dubious honor here at Mid-Chapparal (See? I can't even get us qualified to be High Chapparal. *sigh*) to be declared as LAIC.

So back to the fake thing...I know it looks like I'm super organized and full of vim and vigor but sometimes I fake it 'til I make it. And I've been fakin' it a lot these days. By the

Wow, we are honored and excited to participate in Recipe Lion's Memorial Day blog post. Matthew over at Recipe Lion posted about it today and I feel so honored to have a feature. I just thought it would be a little paragraph and a recipe. Turns out it's a complete meal and he included the entire Memorial Day Menu!

I'm very excited because these articles and coverage are among the first pieces of exposure for Fluffy Chix Cook! And Fluffy Chix Cook is grateful for the validation and confirmation that the track and vision of FCC is on target!

Joe over at Craving Sugar News has also been very awesome to include Fluffy Chix posts and I hope that little by little (and with your help too!) word is getting out. We'd ultimately love it if Fluffy Chix had tons of people runnin' around playin' in our tiny acre of Texas!

You’ve all heard about the Easter Bunny, right?

I lived the life of a Texas Transplant for a few years in my misspent 20-somethings. Living in the wilds of Denver, Colorado, just 6 blocks from Washington Park in an old neighborhood called Old South Gaylord, truly felt like a whole other life.

Old South Gaylord was a picturesque little neighborhood, filled with incredible people, and soooo different from Texas - my beloved state to thee I sing.

What are the odds, but I met another Texas Transplant only 3 doors down? What a fun time in our life! We’d sit out on the front porch every night and would all yell over at all the neighbors sitting on their porches.

I know. Many of you might be right.

The ‘boys’, you remember our sock monkey boys: Buddy, Tony, Kevin, Schylling, Zippy, and their little toy dog WeeWee, and WeeWee’s baby Skeeter, all think I’m nuts.

I think they may have a touch of PTSSD (post traumatic simian stress disorder), cuz they say, “Mom, you’re not makin’ that insane salad crap are you?”

And I see them quake just a tiny bit.

Weekends felt special, growing up in our family. It seemed like every weekend,  three houses of neighbors and their bazillion kiddos got together and had a party.

The dad’s cooked something up on the grill or pit. The mom’s made great sides and desserts and through it all, our WaWa (Daddy’s mom) would solidly pitch in to help cook and also smooth the madness that was constant activity among the Gibbs family, the neighbors and kids running helter skelter. She was the running board on our sailing ship. Without WaWa, we were difficult to direct.

Baked Ham & Swiss Egg Cups with Spinach Tomato Green Onion Sauté

I scored a free ride on the Cheeburger Cheeburger (No-Coke-Pepsi) Express last night, compliments of Denny Crane. Truth was I was draggin’ tail and could not get the energy to rustle up some grub for Denny and the “boys”.

Oh the boys woulda been the easy part, just fling ‘em a banana and a couple of peanuts and they’re set! Sock monkeys don’t take much feedin’. But Denny is a bit trickier. Turns out all I had to do was pretend to take a package of chicken out to defrost for dinner. Who knew?! Remember that trick!

I started obsessing about yet ANOTHER image I found Verrrrrry Pinspirational! Pinteresting enough to make and to make it up on my "You Pinspire Me" Board.

And the obsession began. I obsessed about how to change it. How could I own it? How could I make it mine-all-mine!

Conclusion of the 2Week Atkins Induction Challenge

I woke up this morning.

Yeah. I woke up! When you’re knock, knock, knockin’ on 50’s door, that is a fork in this Texas girl’s road that becomes increasingly important with each passing year. More so this year, because of the fight with Stage IIIC Breast Cancer. (Don’t really understand yet why I’m so insistent about putting caps to those words…hmmm. Points to ponder.)

Thanks for waiting so patiently as I get caught up here in the Fluffy Chix Roost. I’m long overdue to deliver the 2 Week Atkins Inductions results. The 14th Day ended Sunday at midnight. I kissed it goodbye, filed it under “done” and am ready to climb that ladder into OWL! Come on ladder. Feets don’t fail me now!

Although staying at 20g of Net Carbs per day was pretty easy, peasy, the part of me that is headstrong and wants what I want, when I want it, really hates being confined with restrictions. Especially now after
