Venison Meatloaf Makes a Great Atkins Induction Dinner!

I love windfalls. Completely unexpected, we were blessed this week with a windfall of epic proportions! A friend brought us a package of ground venison, some venison backstrap, and wild boar steaks along with a bit of venison sausage. I couldn’t believe our good fortune! You see, we grew up with hunter-gather daddy who loved to hunt and fish. Most of our meat was shot, caught, or wrestled to the ground with pure skill and cunning! And Dad was feeding a family with 2 growing boy, plus 3 daughters with healthy appetites, in addition to Mom and WaWa (Dad’s mama). So that was no easy feat to bag enough wild game for that size a family. But he did it. Successfully!

We do not hunt or fish so much these days. Leases are too expensive and the fatigue leftover from the cancer doesn’t leave me much energy for getting out into the wild. Excuses, excuses. The main reason is that we’ve become too accustomed to hunting and gathering down the isles of our conveniently located HEB. HEB, like all major super markets, diabolically destroys seasons, allowing us to eat anything our little heart desires, in-season or out-of-season.

Sadly, we don’t eat much wild game these days. So when our friend showed up with a passel of venison and wild boar, holy moly, the wheels started churnin’! I went for the ground venison first! It didn’t even make it to the freezer! You see, whole muscles freeze and reheat much better than ground meats. So I knew the ground venison would be first on the table! And meatloaf would be the name of the game.

Usually I use a combination of oat fiber and coconut fiber to replace bread or oatmeal that is used to keep meatloaf moist and tender. But since we’re on Induction, the oat fiber (which is different than oat bran, rolled oats, or oat flour) is off the table for the short term. I replaced it with pumpkin and the results were delicious!

No, it does NOT taste like pumpkin!

I used some of the barbecue sauce in the easy glaze. Boy was it yummy!

Atkins Induction Dinner – Day 10

(This is my scheduled Fast Day – which is NOT part of Atkins Induction. Remember, I practice alternate day intermittent fasting.)

Day 10 Daily Totals: 503 Calories; 26g Fat (46.3% calories from fat); 37g Protein; 31g Carbohydrate; 10g Dietary Fiber; 263mg Cholesterol; 21g Net Carbohydrate

Breakfast & Lunch (0)
3 cups decaffeinated coffee, black, unfiltered

Dinner (503 Calories; 26g Fat (46.3% calories from fat); 37g Protein; 31g Carbohydrate; 10g Dietary Fiber; 263mg Cholesterol; 21g Net Carbohydrate)
1 serving Quick Venison Meatloaf
1 serving Mashed Fauxtatoes
7 ounces yellow squash
1 teaspoon unsalted butter
1 ounce grape tomatoes
1 ounce cucumber
1/2 teaspoon olive oil

Notes: I’m not worried one little bit about going over by 1 gram of net carbs. The stress of worrying is worse for you than the extra carb. I know I’m losing and am on track. It doesn’t even bother me that I consumed all 21 grams of Net Carbs in a single meal. That is still considered a low carb meal, believe it or not! But I will say, it is generally better, not to mention that it’s one of the rules of Atkins Induction, to spread 20g of net carbs between 3 meals.
